We cut the pig’s trotter roll into 2-centimeter thick slices, we passed them through a non-stick frying pan until they were very crispy on both sides.

  • In the same pan and with the remaining oil, if necessary add a little more, slowly sauté the onions over very low heat, allowing them to caramelize.
  • Add 1/2 glass of muscat wine and, stirring until it reduces,

Finally, we add the curler and as a garnish the caramelized onions in the muscat sauce
